Vegan bolognese

Preparation

  1. Peel carrots, clean celery stalks, and finely dice everything. 
  2. Heat olive oil in a pan and add the Berief organic tofu mince. Sear the tofu mince and put it in a bowl. 
  3. Put the finely chopped onions with the garlic in a pan and sauté until translucent. Add the carrots and the celery stock and simmer. 
  4. Add the tomato puree and sauté everything together briefly. Deglaze with the tomatoes, the tomato juice and the vegetable broth and let everything simmer at medium heat for 30 minutes. 
  5. Then add the Berief organic tofu mince and let everything simmer for an additional 10 minutes. 
  6. Season with the herbs and the vegan bolognese is ready. 
Tipp

So that the flavour of the vegetables remains intact, you can also deglaze the whole thing with a little white wine.
