- Wash tomatoes, remove cores, then cut into eighths. Those who prefer can remove the skins of the tomatoes beforehand.
- Wash and dry basil, pluck off the leaves, place a few leaves to the side as a garnish, cut the rest in strips.
- Place tomatoes basil, Berief soy drink and ice cubes in a container and finely puree with a hand blender and whip until creamy.
- Season with salt and pepper to taste.
- Garnish with a few basil leaves – a real delight!
